Earlier this summer, while placing an order on Amazon.com, my fiance asked me if I needed anything to meet the $25 minimum purchase required for free shipping (who wants to miss out on that!?).
I immediately thought: Popsicles!!!! (Strawberry Banana Yogurt Popsicles in fact!)
I had these BPA-free Popsicle molds on my wish list since winter. So, what better time than the beginning of a HOT long summer to start experimenting with some tasty, healthy and refreshing summer treats?
Now, as summer is winding down (even though it’s still been mostly HOT in Texas), I thought I’d share the recipe we’ve been perfecting and enjoying all summer long
Strawberry Banana Yogurt Popsicles
Prep Time: 10 minutes
Freeze Time: 4 -5 hours
Servings: 6 Popsicles
2 cups* of Greek Yogurt (I use Fage 2% for a richer, creamier consistency)
1 Banana (Makes everything creamier!)
3/4 cup of Strawberries (Frozen or Fresh)
Stevia or Honey for a bit of extra added sweetness
*Usually, I have a little mixture left over
Place all ingredients in a blender and blend to a smooth consistency. Pour mixture into the Popsicle molds and place in the freezer for at least 4-5 hours.
