It’s safe to say Broccoli is one of the Healthiest Foods out there.
It’s jam-packed with Vitamin C and dietary fiber AND not to mention, it also contains multiple nutrients with potent anti-cancer properties.
But did you know Broccoli also has a significant amount of protein?!
That makes this vegetable one of my all time favorites.
And this recipe will even leave kiddos asking for more.
Simple, Quick + Easy Delicious Roasted Broccoli Recipe
Prep Time: 5-10 minutes
Cook Time: ~ 25 minutes
Extra Virgin Olive-Oil
Salt + Pepper
Optional: Feta or Parmesan Cheese
Preheat oven to 350 degrees. Clean and Cut Broccoli, and arrange on a baking sheet lined with aluminum foil (easier for clean up). Toss the Broccoli with a healthy dose of Olive Oil, Salt + Pepper – enough to coat the Broccoli – and use your hands to mix everything together. When I’ve made this with kids, they LOVE this part so if you have any kids, this is the time to get them involved!
Pour some lemon juice over the Broccoli and place in the oven for approximately 25 minutes. Less if you like super crunchy Broccoli.
After it’s done, it’s your choice if you’d like to add some cheese before serving. For some people, this makes it all the better!
